Low Fat / WW Friendly Dessert

We were invited to a softball picnic and in my infinite wisdom said I would bring a dessert. On one hand it is good because there will be something low calorie there that we can eat but as to what to make...nothing is jumping out at me. There was one recipe that I had in mind but it called for sugar free jello and I will not let my kids have artificial sweetners so I would not expect to serve it to a bunch of other kids either. Oh and someone else is already bringing cookies. Any tried and true recipes out there?

My husband suggested almond bars but those are definitely a RED light food for me and could me in a lot of trouble really fast :-)

What can I do next?

Fruit is weight watchers friendly. How about a nice big seedless watermelon that is already cut up or a fruit salad. why does it have to be a traditional dessert? It is getting hot out and everyone loves watermelon and most love fruit salad. Personally,I would do the watermelon, cut it up put it in containers and bring it with you.

Friuit pizza--Get a can of sugar cookie dough, spread out on a pizza pan bake until done -- 8 oz softened cream cheese 1/2 cup powered sugar 1 tsp vanilla mix with hand mixer - spread on cooled cookie dough - top with favorite fruit. I like kwie (sp), blueberries, raspberries, strawberries. I'm not sure how low fat this is but it is really refreshing and yummy.

You should go to the Hungry Girl website - I bet she has some great recipes you could use.

You could always use regular Jello in whatever you were going to make. Jello is Fat Free not matter if it is sugar free or not, and I really don't think that Jello has that many calories. I think I know what you are thinking of where you use a pound cake, raspberry low-fat yogurt, raspberry jello, and whip cream I think.....and then layer it in one of those pretty tall glass dishes.....(I can't remember what it is called for the life of me right now) - anyways, I substitute angel food cake instead of pound cake in that recipe (it is low calorie, and low fat) and it is marvelous. I also use the regular Jello instead of sugar free.

Mine also involves angel food cake....drizzle #2 baby food fruit over a slice of angel food cake. My favorite is #2 peaches or #2 blueberries.

What about ambrosia? You use sour cream, can fruits and marshmallows. You can find a recipe online I'm sure.

I don't know how low-fat it would be, but this is an all-time favorite of my husband's. I'm sure it has a real name, but he always just calls it "Pink Stuff" salad.

1 Container Cool Whip (I think I just usually buy the regular 8 oz size)
1 small can mandarin oranges, drained
1 can crushed pineapple, drained
1 can Cherry Pie filling
1 can sweetened, condensed milk (Eagle Brand is an example)

Mix all ingredients together in a large bowl and chill overnight!

To make it more low-fat, I don't see any reason why you couldn't use Light cool whip and low-fat or fat-free sweetened condensed milk.

There is a weight watcher recipe that uses a 20 oz can of crushed pineapple mixed with an angel food cake mix. That's it - just bake in 13 x 9 pan according to the cake mix box. Serve with Cool Whip Free or Cool Whip Light. You could put some fresh strawberries on it, too, to make it more picnic-ky.

my vote is NO on the jello....if it's hot, then it will melt & drip!

Go for something fruity: a watermelon boat cut like a baseball glove, a fruit salad, a fruit platter!

I know you said cookies were out, but what about s'mores? Premade? & the new thing is to add a piece of fruit to it! So: grahm crax base, frost it with marshm fluff, & put a piece of choc & a piece of fruit on top. They're yum......any type of berry works well - even blackberries! I've also used a slice of apple, pear, kiwi.....the options are endless!

Strawberries and whipped cream, frozen bananas are really easy but you would need a cooler to store them, apples with low fat carmel dip(they have the pre-cut packages of apples).

Strawberry shortacakes with light whipped cream on top.
I use sliced strawberries and cherries. And the whipped cream only has about 15 calories per serving and 1g fat. :)

Buy a spice cake mix and add 1 can of pumpkin, 1/2 cup apple sauce and half cup of water. Bake as directed.
Very yummy and low fat.
