Dessert Recipe Needed for a Crowd

Hi Moms,

I am a good cook, but a terrible baker. We are in a supper club and rotate assignments between families for our monthly get-togethers. It's my turn again to bring dessert tonight and I could use some ideas.

Ironically, it's mostly the dads who are the cooks in our group - except for me. Recent dessert contributions have been chocolate waffles made on the spot with a variety of toppings, flourless chocolate cake, individual parfaits made with several different mousse flavors, you get the picture... On the other hand, I have had some yucky "misses" over the years in the dessert category.

I don't think I am going to pull off something really fancy with a high degree of difficulty, but if it looks presentable and tastes great I would feel like I made a decent contribution. Our group has eight adults and eight children - I would be fine with doing different dishes for parents and kids...

Any great ideas?

I think I have the perfect recipe for you :o)

Chocolate Pecan Critters:
1 (11 1/2-ounce) package milk chocolate chips
1 (6-ounce) package semi-sweet chocolate chips
1/4 Cup butter or margarine
1 (14-ounce) can sweetened condensed milk
1/8 teaspoon salt
2 Cups coarsely chopped pecans
2 teaspoons vanilla extract
Pecan halves

Microwave: In 2 quart glass bowl melt chocolate chips, butter, sweetened condensed milk, and salt. Takes about 3 minutes on high heat, stirring after 1 1/2 minutes. Stir to melt chips; stir in chopped nuts and vanilla. Drop by teaspoonfuls onto wax paper lined cookie sheets. Top with pecan halves. Chill. Keep tightly covered.

Makes about 5 dozen.

I have made these and they are so quick and easy. But they will disappear quickly! =o)

OK, I don't cook, at all. LOL This is my favorite dessert recipe.

Ingredients:
1 Extra Large Hershey Chocolate bar
1 Large tub of Cool-Whip
1 graham cracker pie crust (or oreo)

Melt chocolate bar in pyrex glass in microwave. Use hand-mixer to mix the melted chocolate with cool-whip. Put in pie crust and chill.

This pie is AWESOME. Some variations include drizzling hot fudge on top before serving, using chocolate pie crust, etc.

I know you needed this for YESTERDAY!! But you will have lots of recipes to choose from next time.

Frozen Lemonade Pie:

3 ingredients only:

1 container of Cool Whip (12 oz)
1 can of sweetened condensed milk (14oz),chilled
1 can of Frozen Lemonade concentrate (6oz), keep frozen

Mix all ingredients together put in ready made graham cracker crust pie shell. Put in freezer over night. This will not be a frozen pie. Its consistency is that of Cool Whip! Very delicious and simple to make. Enjoy for next time!

I think this response is too late for this time, but you might want to keep it in mind for your next time. This dessert has never failed to be a hit and the talk of every event I have taken it to.

Dirt Cake

20 oz. package Oreos (crushed [I use the food processor[)
1/2 stick butter
8 oz. package cream cheese
1 cup powdered sugar
3-1/2 cups milk
2 small packages instant French vanilla pudding
12 oz. Cool Whip

Cream together (with mixer) the butter, cream cheese and powdered sugar.

Mix together (with wisk) the milk, pudding and cool whip.

Add pudding mixture to the cream cheese mixture and mix well.

To put it all together, I buy a 8" diameter clay or plastic flower pot and go to the florist and buy a clear plastic liner to fit the pot. If you are using a plastic pot that does not have a hole in the bottom you will not need the liner; just be sure to wash the pot well first.

Layer the cookies with the pudding mixture starting with the cookies and ending with the cookies. The top will look like dirt. (Refrigerate)

Decorating is whatever suits your fancy. Sometimes I decorate the top with gummy worms and a plastic sand shovel. Sometimes I put in some plastic flowers. When I serve this at home, I take it out of the refrigerator and put it in the center of my table. Guests usually just think it's a centerpiece and are blown away when I start scooping it out for dessert!

This is an awesome recipe and very sinful. I call it the Sinful dessert. it really doesn't have a name. Hope you try this and enjoy it.
1. Angel food cake - tear up in pieces and place in 13 x 9 pan
2. Mix 2 packages of cream cheese (large), 1 can evaporated milk (small) & 1 cup sugar. Pour over angel food cake.
3. 2 cans of cherry pie filling and pour over cream cheese filling.
4. Chill at least 1 hour. The longer you chill it the beter it is.
You can double this recipe. I use a throw away turkey pan when I double it. Hope you try this and enjoy it.

This is really good. My aunt gave it to me and it has always been a hit! Even if you decide not to do it for your party, please make it for at home or for friends....really good!
Cheese Danish
2 8oz packages cream cheese, soft
2 8oz packages cresent rolls
3/4 Cup sugar
1 Tbsp. lemon juice
1 tsp. vanilla
yolk of one egg

Topping:
1/3 cup sugar
1 egg white
1 tsp cinnamon

Greast a 9x13 baking dish. pat one package of cresent rolls in bottom. mix together cream cheese, sugar, vanilla, lemon juice and egg yolk. spread over bottom layer of rolls and cover with the second package of rolls. Mix ingredients for topping with fork and spread venly over the top. Bake at 350 degrees for 25-30 minutes.
I bake all the time and this is so great! Hope you enjoy!

we love this one and it can be made way ahead and then just baked for about 10-15 minutes when needed...

Molten Chocolate Cakes
makes 5 or 6 depending on ramekin sizes

6 oz butter
6 oz bittersweet chocolate (I use 70%)
3 whole eggs
3 egg yolks
1/2 c sugar
1/3 c flour (white or wheat - see note)
1/2 tsp cinnamon

Melt butter and chocolate in double boiler. Meanwhile, whip eggs, yolks, and sugar to ribbon stage. Add melted chocolate to eggs slowly while stirring (to prevent cooking eggs). Fold in flour and cinnamon. Put batter into buttered and sugared individual molds. Bake at 400-425 degrees for 10 minutes or until top is set. Invert immediately onto plates.

Notes:
* Ramekins with sloped sides work best for turning them out later.
* Sometimes I prep the ramekins with butter and unsweetened cocoa instead of sugar.
* Plating ideas:
- after inverting, dust the whole plate with cinnamon or powdered sugar
- top with whipped cream and a garnish
- put a pool of raspberry sauce around the cake
- you can stab the cake with a cookie (gingersnap?) and get it to start oozing
* These will keep uncooked, refrigerated, and covered for about 1 week.
* I usually use 100% whole wheat *pastry* flour, but I have used 100% regular whole wheat (the batter was not as smooth, but the cakes turned out fine).

I have the worlds best bananna pudding recipe AND a great ICE CREAM CAKE RECIPE!

you need

banannas
1 can of sweetened condensed milk
1 med containor of coolwhip this
1 box of nallia wafers
2 lg boxes of vanilla pudding
2 and 2/3 cup of milk
I prefer to use a my mixer on low rather than hand beating
1 large foil pan with lid
This recipe can be doubled

combine
pudding and milk in a large bowl and mix
add in condensed milk and mix on low
once blended, FOLD in the cool whip
once completely FOLDED in, its ready

Now, take a little of the mixture and spread it on the bottom of your pan with a spatula then add a layer of nilla wafers on top of mixture.
Now add a layer of cup bananas on top of the wafers.
Now, add a thick layer of pudding mixture on top of bananas, then a layer of wafers then a layer of bananas and so on until all mix is used.

its important that the very top layer is the pudding mixture so you can either add a final layer of wafers on top or crumble up a bunch of wafers and spread on top Now cover and put in fridge until you are ready to serve.
this is the richest, most heavenly pudding you will ever taste. trust me and dont make the slices to big a little goes a long way.

ICE CREAM CAKE

Bake a round cake from a box then let cool out of pan on rack. let a 1/2 gallon of ice cream melt in the fridge for most of the day.
Slice the cake sideways into 3 equal slices.
Back in the round cake pan, place one layer or cake on the bottom of the pan, now place a layer of melted ice cream on top of the cake,
now you can add flavored whip cream if you desire (you can spice this recipe up any way you want this is just the basic one)
then place another one of the cake slices then another layer of ice cream then a final layer of cake on top.

NOW , you can top this 2 different ways. you can put a thick layer of ice cream on top and freeze entire thing over night then pop put of pan decorate before serving OR

you can let it freeze over night with the cake layer on top and then before serving you can pop the frozen cake from the pan and spread cake frosting on top and sides then slice and serve immediately.
You can subsitute gelato or sorbe for the ice cream if desired.

All righty...this is so easy and so good, serve with ice cream.
Dump Cake
1 large can sliced peaches
1 big can (tuna sized) diced or crushed pineapple
(don't drain either peaches or pineapples)
1 box yellow cake mix
1 stick of butter

9x13 pyrex
Mix cans of fruit in bottom of pyrex. Shake mix on top and drizzle butter on top. Bake at 350 for about 30 minutes. Makes your house smell like HEAVEN! It's like a simple easy cobbler.

My name is Kamie and like yourself love to cook but am not much of a baker either. I have a simple crowd pleasing recipe that adults enjoy as well as kids. The dessert is called Chocolate Eclair
Pudding filling:
1 cup powdered sugar
2 small pkgs french vanilla instant pudding
12 oz cool whip
3 cups milk
1 box graham crackers
1 can Betty Crocker milk chocolate frosting
Mix dry powdered sugar and instand pudding. Beat 3 cups milk in dry powdered sugar and pudding. Stir in cool whip. Layer graham crackers, half pudding mixture,another layer of graham cracker and last half of pudding mixture and top with another layer of graham crackers. Spread icing over last layer of graham cracker (i've found it spreads easier if you microwave the frosting a little to soften) Use a 9x13 pan for this and refrigerate. I literally catch my husband eating this in the middle of the night....LOL .... and always get lots of compliments on the dessert. Good Luck! I hope you enjoy this as much as our friends and family have!

My 8 year old son and I have been making this dessert together for about 4 years now. Whenever we're having a special dinner we buy some oreos and coffee flavored ice cream(it's Daddy's favorite). The morning of our dinner party we scoop out several balls of ice cream and line them in a dish with parchment paper and put them back in the freezer. We then put several oreos in a large freezer bag and I give my son a small pan for him to smash all the oreos up. Once he's done with that we seperate a small amount of the crushed oreos into a bowl and then we take our ice cream balls and put them in the bag of oreos. Let him shake them around and each ball gets a yummy cookie coating. We then take martini glasses or some sort of nice stemmed glassware and put some crushed oreos in the bottom. At serving time you put your cookie coated ice cream ball in the glass, sprinkle a touch more cookie crumbles on and pour the tiniest amount of milk over it. If you like whipped cream that would be a nice finish as well. Another great alternative to the coffee flavor with oreo is a vanilla bean with granola or toffee bits. It looks amazing and taste even better. It's quite an impressive dessert that the little ones can help with and you can obviously adjust the flavors according to what your guest would enjoy. This is my FAVORITE dessert, a real crowd pleaser. It has a bunch of steps, but it is really easy because you are just layering ingredients. I have never met anyone who didnt love this dessert!

Temptation Cake

1 box Golden Butter Cake Mix
2 cups Sugar
1 can Crushed Pineapple
8 oz. Cream Cheese
1 sm. Pkg. Vanilla instant pudding mix
2 cups Milk
2 Bananas, sliced
8 oz. Cool Whip
Chopped Pecans *opt.
Maraschino Cherries *opt.

Bake cake according to directions, except use milk instead of water. Bake in 13” x 9” pan or casserole dish. After cake is baked, punch holes all over the top. Bring the sugar and the pineapple to a boil and pour over cake while hot. Let cake cool to room temperature. Blend together the cream cheese, pudding mix and milk. Pour over cooled cake and put in refrigerator until the mixture thickens. Cover with sliced bananas and spread with cool whip. Sprinkle with pecans and cherries. Refrigerate.

I have the easiest and greatest dessert for a crowd... if you don't mind a few calories.

You need:
1 box of yellow cake mix
1 can crushed pineapples
1 can sweet cherries - (Cherry Pie Filling)
1 stick of butter

How to make:
Preheat oven to 350, and coat a retangular cake pan -
Pour can of cherry pie mix into pan
Pour can of crushed pinappples drained on top of cherries
Pour yellow cake mix on top of that
Melt butter and drizzle all over the mix

Bake at 350 for 20 - 30 minutes until cake mix is golden brown. Serve at room temperature.

Your guests will be begging for the recipe. It's original name but not so flattering is "Dump Cake" since you dump everything in and bake. We now call it "Cherry Surprise Cake".

Hey K.,
I have a super easy and wonderful Chocolate Chip Cheesecake recipe.

The ingredients are:
2 rolls of chocolate chip cookie dough
2 8oz. packages of Philadelphia cream cheese
1 c. sugar
1 tsp. vanilla
1 egg
Get a 9 x 13 inch baking dish - spray lightly with Pam. Flatten one roll of cookie dough on bottom. Mix cream cheese, sugar, vanilla and egg. Put mixture over cookie dough. Flatten other roll of cookie dough (little by little in your hand) and put on top. Bake at 375 for 30-35 minutes. Put a piece of tin foil lightly on top for the last 10 minutes or so.

We eat this alone or with ice cream!

Eclair Cake

2 small boxes of french Vanilla instant pudding (can use sugar free/fat free
1 8 ounce Cool Whip (can use sugarfree/fat free}
1 box graham crackers (can use reduced fat)
1 container of Chocolate Frosting
3 cups lowfat/fat free milk
Layer the bottom and sides of a 13"x9" dish w/graham crackers. Beat together 2 boxes pudding mix with milk until fluffy and throughly mixed about 2 minutes. Pour pudding over top of graham crackers, spread evenly. Top with layer of graham crakers. Refrigerate for 2 hours. Spread frosting over top of Graham crackers. Ready to eat. Keep refrigated. You can change the way you make this in many ways by changing pudding flavors and icing flavors.

I make a chocolate mouse that is very easy and it is really good. Melt 3 squares of semi sweet chocolate in a double boiler or microwave. While that is melting whip up about 2 cups of heavy cream. Fold about a fourth of a cup of the whipping cream into chocolate and then add the chocoalte mixture to the rest of the whipping cream. You can add a couple of tablespoons of Grand Marnier or Kaluha if you like, and then put it in martini glasses or a nice bowl.

You can also melt a couple of squares of white chocolate and divide the whipping cream in half, and put the melted semi sweet chocolate in one half, and the white chocolate in the other half of the whipping cream and layer it in the glass.

I make a mean chocolate cake and it is so easy to throw together and it is SOOOOO good!
1 box of chocolate cake mix and follow directions
1 small tub or pkg of sour cream
chocolate chips (I use dark chocolate, but use as much as you want, it depends on how much you like chocolate) but the recipe calls for 3/4 C.

I put it in a bundt pan, cook it at 375 for about an hour (cooking times vary) or until stick comes out clean. My friends never know that its almost a cake mix!

My granddaughter makes this and it's a huge hit; she's only 13. I had her to make it for my Pokeno group and everyone asked for the recipe.
It's a very easy recipe----good luck!

Sopapilla Cheesecake Recipe

2 cans of crescent rolls
3-8oz packages of cream cheese, softened to room temperature
1 1/2 cup sugar
1 tsp vanilla extract
1/2 cup margarine or butter, melted
1/2 cup of cinnamon sugar mix {1cup sugar & 2 Tbls cinnamon}

Unroll crescent rolls to cover the bottom of a 9x13 baking pan and flatten.
Mix the cream chese, sugar and extract together until well blended.
Spread over the crescent evenly. Unroll and lay the other can of crescents over the top of cream cheese. Pour melted butter over the top and sprinkle with cinnamon/sugar.
Bake at 350 for 30 minutes.

Hello,
This recipe is my husbands great grandmothers recipe and is always a big hit. It is best warm, but taste delicious any way you eat it. The topping will look runny or look like it will seperate, but trust me, it is really good, especially if you like strawberry.

Strawberry Jello Cake: Preheat oven 320 degrees

1 pkg. white or yellow cake
1 pkg. small strawberry jello
3 TBSP. flour
2/3 C. water
2/3 C. oil
4 eggs
1 10 oz. box of strawberries(reserve 1/2 box for icing)
1 box powdered sugar
3 TBSP. softened butter

Combine cake mix, jello, & flour. Add water, oil,& eggs; mix well. Stir in 1/2 strawberries. Bake 1 hour in 10x13 pan. No need to grease or flour.
ICING: Cream powdered sugar and butter, add juice from strawberries, mix well. stir in remainder strawberries.
Poke holes all over cake with ice pick, fork, or whatever you choose. Spoon icing onto slightly warm cake.
This recipe doubles well. Hope this helps!

This so easy and everyone loves it!
1 box mini icecream sandwiches
1 large tub of Cool Whip
1 bottle chocolate topping-the kind that hardens on icecream-the kind with toffee is great

In 9x13 glass dish, layer half of the icecream sandwiches, spread half the whip topping over these, then another layer of sandwiches, then the rest of the whipped topping. Lastly, pour the chocolate topping all over the top-use as much as you like. Cover and put in freezer. Set out about 15 minutes before you plan to serve it-to make it easy to cut. That's it and it's delicious.

I just made this on Saturday for a dinner party and it was a huge success (plus it's my favorite...) The name is "Chocolate Delight" or "4 Layer Delight" :

Chocolate Delight
(or “4 Layer Dessert”)

1 C. Flour
1. C. Pecans – chopped
1 stick melted butter

**************************************************************
1 Large Cool Whip

8 oz. Cream cheese – softened
1 C. Powered Sugar

**************************************************************
1 large box instant CHOCOLATE pudding mix
1 large box instant VANILLA pudding mix
4 C. Milk (2% or higher, otherwise the pudding won’t set)

**************************************************************

FIRST LAYER: Mix flour, pecans, and melted margarine in bottom of a 13 X 9 baking dish. Pat flat and cook at 350°F for 15 minutes. Cool completely.

SECOND LAYER: With a hand mixer, mix the cream cheese, powdered sugar and 1 Cup Cool Whip. Spread on cooked mixture.

THIRD LAYER: Mix vanilla and chocolate pudding mixes with milk until thick. Spread on second layer.

FOURTH LAYER: Spread on Cool Whip. (sprinkle some more chopped pecans on top to make it “pretty”)

Refrigerate until you’re ready to serve.

I made this for my office potluck. It's delicious.
"Not Yo' Mama's Banana Pudding by Paula Dean"

2 bags Pepperidge Farm Chessmen cookies
6 to 8 bananas, sliced
2 cups milk
1 (5-ounce) box instant French vanilla pudding
1 (8-ounce) package cream cheese, softened
1 (14-ounce) can sweetened condensed milk
1 (12-ounce) container frozen whipped topping thawed, or equal amount sweetened whipped cream

Line the bottom of a 13 by 9 by 2-inch dish with 1 bag of cookies and layer bananas on top.
In a bowl, combine the milk and pudding mix and blend well using a handheld electric mixer. Using another bowl, combine the cream cheese and condensed milk together and mix until smooth. Fold the whipped topping into the cream cheese mixture. Add the cream cheese mixture to the pudding mixture and stir until well blended. Pour the mixture over the cookies and bananas and cover with the remaining cookies. Refrigerate until ready to serve.

This is a great cake recipe...
take a regular box cake mix-chocolate and bake according to the directions. Once it's out of the oven but before its completely cooled poke holes into the cake and pour one jar of caramel ice cream topping over the top and then do the same with a jar of chocolate sauce as well. Let it cool and then cover it with cool whip and sprinkle broken candy bar(Heath, Snickers or Skor)pieces on top. It's fantastic and easy. HTH

How about a brownie trifle? Bake a large batch of brownies - a box mix is great! Let cool and place 1/2 of the brownies, crumbled, into a trifle bowl or large, glass bowl (so the layers show). Mix up 2 packages of chocolate or vanilla (or even cheesecake!) instant pudding. Let that set for at least an hour and then spread 1/2 of it on the brownies. Top with 2 broken Heath bars and then top with 1/2 tub of Cool Whip. Repeat layers and end with the Heath bars on top of the Cool Whip. Refrigerate for a few hours. This does feed a lot of people and makes a pretty presentation. Another alternative is pound cake and berries with vanilla or white chocolate pudding. Here is a recipe for a very berry trifle. It is a winner and looks amazing! Here is the recipe.

Very Berry Trifle

Prep time: 25 minutes
Bake time: 25 minutes
Makes 16 servings

1 (18.25 ounce ) White Cake Mix
1 -1/4 cups water
1/3 cup Vegetable Oil*
4 egg whites
1 (12 ounce) jar Strawberry Preserves
8 coconut macaroons, crumbled, divided (2 cups)
3 cups mixed fresh berries
1 (6 serving size) box instant vanilla pudding, prepared according to package directions (3 cups prepared)
8 oz frozen whipped topping or real whip cream
1/4 cup slivered blanched almonds, toasted, if desired
Preheat oven to 350ºF.
Spray two 8-inch round baking pans with Crisco No Stick Cooking Spray.
In the bowl of an electric mixer combine cake mix, water, oil, and egg whites; beat on low speed for 1 minute; beat on medium speed 2 minutes more, scraping bowl occasionally, (or beat 2 minutes by hand, using a wire whisk).
Pour into prepared pans. Bake 25-30 minutes or until toothpick inserted in center comes out clean. Cool 10 minutes in pan. Run knife around side of pan before removing. Cool completely on wire rack.
Cut cooled cakes horizontally in half. Spread each lower half with half of the preserves; replace top.
Cut one of filled cakes into bite-sized pieces and place randomly into bottom of 14-cup trifle or glass bowl.
Reserve 2 tablespoons of macaroons; sprinkle with half of the macaroons.
Spread half of the pudding over macaroons. Top with half of the berries and whipped cream.
Repeat layers: remaining cake, macaroons, pudding, whipped cream, and garnish with berries and 2 tablespoons of remaining macaroons. Refrigerate 6 hours or overnight.

I'm all about simple and easy!!! Maybe you could try a make-your-own-sundae kind of dessert. Get some packaged brownies, bags of individual ice creams, a variety of toppings (hot fudge, strawberry, butterscotch, etc.), some sprinkly things (the kids will like those), whipped topping, nuts, some styrofoam bowls and plastic spoons, and you have a fun dessert!!

Hi,
I love to take an Angel food cake mix and add either a can of cherry pie filling or a can of crushed pineapple to it.
To make it you just take the cake mix and put it in a glass or metal bowl and dump in the can of fruit, nothing else. Beat it with the mixer and bake according to box directions. Cool upside down. It is so good!! It doesn't seem like there will be enough liquid, but it works out. Just be careful not to use plastic of any kind or your cake will flop. Read the box of cake mix first about glass and metal bowls and utensils only.

K. - at our last get together I did a Sundae Bar. Just bought vanilla and chocolate ice cream and all kinds of toppings - nuts, caramel, hot fudge, sprinkles and whipped cream. EVERYONE loved it! The kids were thrilled to build their own and adults couldn't remember the last time they could do that! P.S I've done the same thing substituting brownies for the ice cream.

Try Do-it-yourself ice cream sundaes. All you have to do is provide several cartons of quality ice cream, some pretty bowls and an assortmant of toppings. Choc. and butterscotch sauce, fresh berries and bananas, chopped nuts and canned whipped cream. Use any topping that strike your fancy and get them all in one stop at the gro or ice cream store.
Always a hit and if it is a fancy party round up some pretty glass dishes even if you have to borrow them from your mother-in-law. A barbeque--use bright plastics.

Purchased frozen fruit from the grocery store. We use strawberries or mixed berries. Place frozen berries in a small bowl or glass. Pour Amaretto Liquid Coffeemate, from the cold case at the grocery, over the berries. Just enough coffeemate to cover the berries. Let sit in refrigerator several hours. Top with whipped cream. Healthy, light and very tasty.

I call it my "redneck strawberry shortcake". So simple and people will enjoy it. Buy frozen stawberries, they them out. Buy a box of twinkies and put the strawberries on top of the twinkie. The whip cream is already inside the twinkie. How simple is that! You've made a fun dessert and contributed to the party and more than likely got a laugh or two out of the group.

Kerri S--I've never been a good cook and only seldom bake, but I can always turn out a good dessert when I have to. I say "Keep it simple." How about homemade brownies? Everyone loves them. I bet you can pull that one off! Then add Blue Bell Vanilla Bean ice cream and Hersheys chocolate sauce on top. Yumm! You might even throw in some caramel sauce for variety. OR--buy an angel food cake, or a pound cake, already prepared from the bakery section at the grocery. Then add strawberries and whipped cream. It's pretty and the appropriate color for "Heart Month". If you want to be a bit more adventurous for the adults, add some amaretto to either the strawberries or the whipped topping for the adults only. You can do the same with the brownies. Add a bit of Kahlua to the brownies. It keeps them moist and makes them even yummier!

FYI--I'm a Realtor too, so I understand how little spare time you have to quip up fancy desserts!

This may be too late for you... but Paula Deen's lemon bars are super easy and taste great!!!! make sure to use real lemons and not the bottled juice. I am at work and can't give you the recipe, but you should be able to find it on her website.

Get a brownie mix --before it is time to eat, heat it up and serve with ice cream and toppings. Little brownie sundays! Or,
make from scratch--not hard, really. Or, buy the premade crepes and fill with whipped cream (home made) and fruit. Drizzle with chocolate sauce. Something fun and easy like that.

Try a pudding in a cloud a dessert lined with whipped topping or whipped cream and pudding for the kids and for the adults fill the cups with white chocolate cheese cake pudding mix mixed with whipped cream then add cut fruit on top for garnish looks nice and is yummy and pretty too. I served it and got loads of complements I was really surprised, at the time i just did it cause I didn't have time to bake a pie crust but individual dishes are or can be as special as you want. also as small in size ar large use parfet glasses or tea glasses I have and they work good. Why not try a trifle? If you don't have a trifle bowl (basically a clear glass bowl on a pedestal), you can just use a pretty clear glass bowl. You can either make or buy an angle food or pound cake. Mix up some instant pudding (whatever flavor you like). Get some frozen fruit and whipped topping. Layer the ingredients in the bowl, except whipped topping.

For example: Angel food cake, vanilla pudding, frozen strawberries and top with whipped topping.

Dear K.:

I love baking deserts, but two "quickies" that always go over well and do not require cooking are strawberry shortcakeand banana splits.

To make an easy version of Strawberry Shortcake just slice pound cake, add sliced strawberries that you have sprinkled with sugar a couple of hours before-hand and spray some whipped cream on top. It is so good that I don't think that people will mind if you just threw it together.

An alternative is banana splits, which are always a hit. Be sure to get all the goodies that people might like from marshmallow cream to marischino cherries and your guests can make their own gourmet delight!

If you are determined to bake, try making a lemon cake from a cake mix, adding lemon pudding for moistness if desired. Cook it in a Bundt pan, then drip a lemon glaze made from fresh lemons mixed with vanilla and powdered sugar (a more exact recipe for glaze is available on-line or in any standard cook book.) Poking small holes in the cake will help the glaze penetrate. This is what makes it tangy and delicious. Since presentation is everything, add some strawberrries or lemon twists. Since it starts with a mix, it is really easy, and I find that frosting can be tricky. Good luck and happy eating!

Kroger has this Crisp Mix in a package that is delicious. Buy canned fruit (I like apple). I think you mix 1 T of water with the crisp mix and put on top of the apple. Then bake per package directions. It tastes sooooo good. I make it all of the time. I get a tad bit embarrased when people ask for the recipe.

This is easy, but delicious. It might be a little too elaborate for the kids (there is rum in the recipe). So you might want to offer the little ones the option of chocolate chip cookies, etc.

Royal Raspberry Rum Cake

1 cup pecans
1 (18.25-ounce) package yellow cake mix
1 (4-ounce) package instant vanilla pudding mix
4 eggs
1/2 cup cold water
1/2 cup vegetable oil
1/2 cup dark rum
1 (12-ounce) package semi-sweet chocolate morsels, melted
1 cup raspberry jam, warmed to room temperature

Buttered Rum Icing:

1/4 cup plus 2 tablespoons butter
3/4 cup sugar
3 tablespoon water
3 tablespoons rum

1. Preheat oven to 325*F (160*C). Sprinkle one cup pecans over bottom of a greased and floured 10-inch tube or 12-cup Bundt pan. Set aside.

2. In large mixing bowl, combine cake mix with instant pudding, eggs, cold
water, oil and 1/2 cup dark rum, mixing well.

3. Pour 1/3 cake batter over pecans. Drizzle melted chocolate evenly over batter in pan.

4. Pour another 1/3 of cake batter over melted chocolate.

5. Spoon raspberry jam evenly over batter.

6.Pour remaining batter on top of jam.

7. Bake for 1 hour or until tested done when wooden pick inserted in center comes out clean. Cool 10 to 15 minutes before removing cake from pan.

8.While cake is still warm, prick top of cake with the tines of a long fork and drizzle and smooth glaze over top and sides of cake.

9.Make glaze by melting butter in saucepan. Stir in water and sugar. Boil 3 minutes, stirring constantly. Remove from heat. Stir in rum.

Makes 12 to 15 servings.

Very easy recipe either for one or 50 people:
In individual bowls or cups, scoop in vanilla ice cream, add some defrosted fruits such as blueberries and raspberries (can be defrosted in the microwave), finish with some melted chocolate (chocolate chips with a tbsp of oil so that it won't harden when in contact with the ice cream, melted in the microwave). Add some sliced almonds or sprinkles on top to decorate, even some little chantilly if you want. It looks very impressive, is dead simple and so good!!

I too am not a good baker, suggestion for next time? Here's the most simple recipe of all:

1. Get in car and drive to nearest bakery/store
2. Purchase several already made cakes/pies/cookies
3. Drive home and put in own containers

If anyone asks, just insist that "Absolutely, I made these desserts!" Works for me everytime and no one ever complains!

How about a fruit pizza? It is easy to make and looks great. You could make a bigger one with a greater variety of fruits on it for the adults and a smaller kids pizza. There are recipes all over the internet, but you basically need some sugar cookie dough, cream cheese, sugar, and assorted fruits (like strawberries, blueberries, peaches, etc.)

Buy an angel food cake and a box of lemon pudding and pie filling. Mix up the pudding according to the directions on the box. Using a serrated knife, or a bread knife, slice the angel food horizontally, making the cake into three layers. Put some of the pudding on the bottom layer, then retop with the next layer. "Ice" the second layer, and so forth. You will probably need the big box of pudding or maybe 2 small boxes.

This may sound a bit dull, but it's not. Visually and taste-wise, it's a delight.

Actually, I've been told that I'm a terrific cook and baker, but one time I had forgotten to check my calendar. I realized about 2 hours before dinner-circle time that I was responsible for a dessert.

My memory served me well, for a couple of years earlier a caterer told me a secret she served repeatedly and she always got rave reviews; so here goes:

Buy pretty paper doilies and shimmery paper sparkles at a craft store or in the card section of the supermarket.

Pick up two ready-made frostings jars, a bottle of green food color, a bottle of peppermint flavoring, a package of the Andes mint pieces (next to the chocolate chips), and several boxes of Little Debbie chocolate-frosted brownies, enough for each person to have at least two. The children will want three.

Rush home, cover a serving plate with the paper doilies, mix a couple of drops of green food color and a couple of drops of the peppermint flavoring in the frosting (to your taste).

Quickly ice the chocolate-iced ready-made brownies. Cover the edges well with your new green peppermint-flavored frosting.

While the frosting is still wet, sprinkle a few of the crumbles of the Andes mint crumbles on top, and put each new brownie creation on the doilied-decorated platter.

As soon as you arrange the pretty treats as you are satisfied, then take the shimmery paper sprinkles and sprinkle those on top of the paper doilies.

Stick a toothpick in each brownie delight to hold up the plastic wrap for transportation. Remove those as soon as you arrive to effectively present your yummie delight.

They are good. People have even asked me for the recipe, but I always conveniently forget to share it. My pride gets in the way.;)

It's still cool enough for pumpkin pie. People go absolutely nuts for my recipe and it's nothing special. Get the ready-made crusts that are rolled up in the section where you get those rolls of biscuits and crescent rolls. I don't EVER make real crust anymore because these are so good and completely reliable. Do you have a pie pan? You can make it in the aluminum ones that are disposable, too. Get a can of Libby's pumpkin (not the mix -- that's not impressive tasting) and follow the recipe on the can with a couple of tweaks: add an extra egg (I think that makes three) and for the spice I use 1 tsp. of cinnamon and 1 tsp. of allspice. This is a standby because it's still yummy even if you overbake it. I don't know why people go nuts, but I guess no one makes pumpkin pie anymore. If you really want to make it even better, use heavy cream instead of evaporated milk and throw in a dash of cloves as well. Oh, and if you are using evaporated milk, double-check before you leave the store that you didn't accidentally pick up sweetened condensed milk. Yuk! Also, grab a can of squirty full-fat whipped cream...then you don't have to whip anything.

Hi, here is a super easy cake with only a few ingredients.
1 cake mix such as lemon, strawberry, yellow etc
12 ounces of diet or regular 7 up or sprite
** for chocolate cake mix use cola for the liquid.

mix and bake according to cake mix box directions.I use a large aluminum foil baking pan (dispose of or take to a friends house and leave).
let cool

one container prepared frosting of your choice, one container of marshmallow cream , 1 tsp vanilla extract (or use almond, lemon etc if using a white or cream cheese frosting mix)
mix together with a hand mixer.

Frost cake.

Hint..I use tooth picks topped with mini marshmallows stuck in the cake, to keep the sheet of al. foil I place over the cake from sticking to the frosting.

I have the answer to make your life easier! How easy does this sound; pour mix in a bowl with 1 cup of water. Mix & pour into pan & bake. Yep that's it and it comes out absolutely awesome. Its called Absolutely Almond Pound Cake and tastes like no pound cake I have ever had before.
