Hi Moms,

I bought a toaster oven(convection) recently, and I am trying to find some quick and tasty lunch recipes for kids. If anyone has good pointers of websites etc, please send them my way. My son loves cheese pizza, so a quick cheese pizza recipe would be helpful as well.

We take seasoned rye crisp crackers with enough sliced tomato to cover the cracker with cheddar cheese and melt them under the toaster oven and they taste great! The cracker gets a great crispeeness to them.

Hi M.- I LOVE my toaster oven. Here are some of my favorites, quick and easy.

Tuna Melt
Ingredients:
1 sourdough english muffin (or bagel or piece of bread)
Tuna
Sliced tomato
Cheese
Directions:
If using english muffin, cut in half and place on toaster rack. Layer on tuna, a few slices of tomatoes, and then top with cheese. Toast until cheese is melted or slightly browned.

For a quick pizza, use either M. pitas- not cut- they sell round flat bread ones at the market or trader joe's, OR use a tortilla. I like to do that. Get the premade pizza sauce either jar or boboli packets- and spread on tortilla. Top with cheese and your favorite toppings. I suggest using the gordita flour tortillas. They are smaller and thicker. Also, if you have it, use the holed tray on top of the rack. Tortillas can burn or get to crisp, but these cook pretty quick, too.

Baked burrito-
Same basic stuff- thick tortillas, layer with beans, cheese, salsa and cook.
When done, add tomatoes, lettuce, and whatever else- a good taco sauce- you can even do a tostada.

You can really do just about anything in a toaster oven. I have cooked steak, chicken, potatoes and veggies- anything that can be baked or cooked in the broiler- can go in your toaster oven.

M.,
WE used to make pizzas on english muffins in our toaster oven. We also made tuna melts that way too. The trick is to let the tuna heat up first before you put the cheese on to melt it as the last step.

I make my daughter's cheese pizza in the oven, but I just use a piece of the sliced sourdough bread, marinara sauce and a slice of provolone. She loves it. Were it for me I'd add herbs & such. Have fun! C.

We don't have a toaster oven, but we use our regular oven to make M. pizza's. I like the Orowheat (sp) Sandwich Thins and then I use either Trader Joe's pizza sauce or something like that, cheese, Canadian bacon and olives. They can make fun faces with it. They taste really good. Much better then the english muffin ones.

We use the toaster oven for M. pizzas on small Bobolis or bagels. We also make grilled cheese sandwiches in the toaster oven and quesadillas. Take the bread or tortilla, put cheese in between the layers and bake on a sheet that comes with the oven. You can also brush oil on the outside of the bread, or butter. You can also do homemade baked chicken fingers. Coat the pan with spray, take cut up chicken, roll in bread crumbs and bake (400 and watch them to see when done - I dont' know the time off the top of my head). I know there are more, but my brain is not in gear yet. I love my toaster oven.

I read your request and a great product for you would be; Pillsbery dough products. For pizza, they have pizza crust for M. pizzas, just put some tomato sauces and cheese for a pizza. You can also do pigs in a blanket and rap creasent rolls around a hot dog. You can also go to Pillsbery.com and they have all kinds of recipes for keep and tasty meals and snacks

Hi,
I love my toaster oven to make M. pizzas. I use english muffins. You cut them in half and toast them for just a bit then put on your sauce (I like the boboli kind but my kids like just plain pasta sauce) and what ever else you like on your pizza's and then put it back into the toaster oven till the cheese melts and its great. Plus they are small enough that everyone can have their own pizza just like they like it.
