Hello, Mama's

I am suppose to bring a dish to my parents for Thanksgiving and wanted to bring broccoli and cheese casserole. Does anyone have a good Broccoli and Cheese Casserole recipe? Thank you in advance.

This one is super easy and SO YUMMY! My family all loves it, even the picky eaters...

2 cups uncooked rice (I use Uncle Ben's white)
2 packages Frozen Chopped Broccoli (the frozen boxes)
1 cup celery, diced
1 cup onion, diced
1 stick margarine
1 can cream of chicken soup
1 small jar cheese whiz (I use the large jar, but both ways are good)
Salt & Pepper to taste

Cook Rice according to package. Cook broccoli according to package (separate from rice).

In medium skillet, saute celery and onion in margarine.

Combine cooked rice, cooked broccoli, sauteed onion & celery in large bowl.

Add cream of chicken soup and cheese whiz. Mix thoroughly. Salt & pepper to taste and stir until mixed well.

Place in casserole (rectangular pyrex) dish and bake 15 or 20 minutes in 350 degree oven.

2 boxes Frozen Chopped Broccoli
2 cups cooked Rice
1 can Cream of Mushroom Soup
1 can Cream of Chicken Soup
2 large jars Cheese Whiz
1/4 cup Milk

Thaw broccoli. I usually use the defrost function on the microwave to do it. Stir the broccoli, cooked rice and both cans of soup together in a casserole dish. Add Cheese Whiz and stir together. Stir in milk (more/less milk may be needed to make casserole creamy but not too milkly). Place in oven preheated to 350 and cook for about 20-30 minutes (until casserole begins to bubble and/or brown slightly).

I am asked to make this dish at every family function. It is great!!!

I made this a couple weeks ago and it was yummy!

Cauliflower & Broccoli Au Gratin
1 lb cauliflower florets
1 lb broccoli florets
1/2 cup water
4 oz. Cream Cheese, cubed
1/4 cup milk
1/2 cup sour cream
1 1/2 cups grated sharp Cheddar cheese
10 Ritz crackers, crushed
3 Tbls grated Parmesan Cheese

Place caulifower and broccoil in a 2 qt microwaveable dish. Add water; cover. Microwave on HIGH 8-10 min. or until veggies are tender.
Microwave cream cheese and milk in bowl 1 min. or until cream cheese is melted. Make sure mixture is blended well. Add sour cream; mix well. Pour over vegetables; sprinkle with cheddar cheese. Microwave 2 min. or until cheese is melted.
Mix cracker crumbs and Parmesan cheese. Sprinkle over vegetables.

Make 10 servings

My recipe is very simple, but people seem to love it.
I don't have measurements because I kind of freelance it.
Fresh Broccoli Florets (Chop fine and steam)
Mild Cheddar (or your favorite cheese)
Long Grain Rice
Cream of Mushroom
Your choice of Seasoning

Steam the Broccoli, Cook your rice, and then thoroughly combine all ingredients. Then, bake in oven for about 20 minutes.

2 10 oz packages frozen brocoli (steam in microwave according to package)
2 eggs
1 can cream of mushroom
1/2 cup mayo
chopped onion (optional)
Sharp cheddar cheese grated (as much as you want)
Salt and Pepper to taste

Mix all ingredients top with cheese and bake about 45 minutes till bubbly and cheese starts to brown on top

Our favorite Broccoli Rice Casserole comes from allrecipes.com.

2 (10 0z packages) frozen chopped broccoli
3 cups instant rice
1 (10.75oz) can condensed cream of mushroom soup
1 (10.75oz) can condensed cream of chicken soup
1 1/4 cups water
1 (16oz) package processd Amercan cheese cubed (Velveeta)
1 tablespoon of butter
Salt and pepper to taste

OPTIONAL:
1 bunch celery chopped
1 large onion chopped

Directions:
Cook broccoli and rice according to package directions. Preheat oven to 350.

Over low heat, mix soups and water. Gradually stir in cheese until melted (be sure NOT to burn).

(OPTIONAL: melt butter in skillet and saute celery and onion until soft)

Combine broccoli, rice, soup/cheese mixture in large mixing bowl, (onions and celery). Pour mixture into a 9 x 13 baking dish.

Bake in preheated oven for 45 minutes until bubbly and lightly brown.

**** I said optional on the celery and onions because our son will not eat it with celery and onion. I'm not a fan of celery, so no loss there.

Whenever we use this recipe (minus onion and celery) we ALWAYS get tons of compliments and return home with an empty bowl. :-)

PS: I made this tonight. PERFECTION!

Family Recipe: We call it "Green Rice"
My Mother-in-law was terrified the 1st time I announced I was bringing green rice to Thanksgiving dinner, but this is the 3rd year in a row that she has requested it, so obviously it was a hit. It is sooooo good & easy (and is not really green!)

Ingredients: 1/2 tsp. salt, 1 cup water, 1 cup 5 min instant rice, 1/4 cup melted butter, 1 can of cream of mushroom, 1 can of cream of celery, 8 oz American Processed Cheese (NOT Velveeta, but you'll find it right next to it- blue box), and 1 bag frozen broccoli floweretts (Bird's Eye Baby Broccoli Floweretts are my favorite, but any will do).

Directions: Heat oven 350.
Cook 5 min. rice according to directions with salt & water. While rice sits, cook broccoli in the microwave for 3 minutes and cube the cheese.
After rice sits for 5 min. mix in butter, soups, broccoli, and cheese. Pour it all into a casserole dish and bake for 1 hour. Makes about 1.5 quarts.

Simple, Easy Recipe:

3 cups of Minute Rice, cooked
1 cup of Chopped Frozen Broccoli, steamed
1 can Cream of Mushroom Soup
1.5 small jars of Cheez Wiz

Mix it all up in an 8x8 pan, put it in the over for 30 minutes at 350. Enjoy!

Hi! This is my family's favorite:

Broccoli Casserole

2 packages of frozen chopped broccoli
1 cup finely chopped onions
1/2 cup butter or margarine
1 small (6 oz.) jar of Cheez Whiz
1 teaspoon of garlic salt
1 can of Cream of Mushroom soup, undiluted
1 (4 oz.) can of mushroom stems & pieces, drained
1/2 cup toasted bread cubes (croutons)
1/2 cup toasted slivered almonds (optional)

Cook the broccoli for 5 minutes on high in the microwave in a microwave safe bowl. While the broccoli is cooking, sautee the onion in the butter in a large skillet until transparent. Add the cheese, garlic salt, mushroom soup, mushroom stems & pieces and 1/2 of the almonds (optional) to the onions. Simmer until the cheese melts and is smooth. Drain the cooked broccoli and put it in a baking dish (around 2 quart size) then pour the cheese mixture over the broccoli. Sprinkle with bread cubes and the remaining almonds (optional). Bake uncovered at 325 for 25 to 30 minutes or until it bubbles.

Rice, Broccoli, and Cheese Casserole

½ stick of butter
1 can Cream of Mushroom Soup
1 can Cream of Chicken Soup
1 small can of evaporated milk
1 tablespoon of minced onion
8oz jar of Cheese Whiz or Velveeta
1 cup of uncooked rice
16 – 20 oz broccoli

Cook the rice in two cups of water
As that cooks, cook the broccoli until tender
Add the rest of the ingredients in a separate pot
When rice and broccoli are finished add to the mixture
Let it simmer and serve

This is my fravorite - it's made with velveeta cheese - so it's really creamy.

1 pkg. chpped broccoli
2 cups cooked rice (I use minute rice)
1 med onion, finely chopped
1/3 cup butter
1/2 cup milk
1 can cream of mushroom soup
1/3-1/2 block of velveeta cheese
salt and pepper

Steam the broccoli and cook the rice like directions on the package. Mix all together and cook 30-40 minutes at 350 degrees.

I make mine the easy way. I buy a package of frozen chopped broccoli and cook it according to the package. Then I add a package of the Lipton Rice Broccoli and cheese flavor and cook according to directions. I then add 1/4 stick of Velveta and a can of Rotel.

This is my absolute favorite!

Green Rice
1 and 1/4 cup long grain rice, cooked according to directions
1 package chopped broccoli, cooked to directions
1 stick margarine
one chopped onion
1 can cream of mushroom soup
grated cheese

Pour rice in oven proof container. Add cooked broccoli (juice and all) to onion and soup. Mix all together. Add grated cheese to rice mixture, and put rest of grated cheese on top. Heat in oven until cheese melts.

*My kids even like this, and you know how kids are about veggies.

This is my favorite recipe from my mom....

Broccoli Casserole -

2 pkgs frozen broccoli
1 stack Ritz crackers
½ lb New York Cheddar Cheese, shredded
1 can cream of celery- I think I usually use cream of Mushroom
¼ can of water used to cook broccoli

Cook broccoli according to directions. Add salt and a pinch of oregano or sweet basil to water. Butter casserole dish. Layer with broccoli, Ritz and cheese. Mix the soup and water and pour over broccoli. Top with cheese. Bake at 325° till piping hot, about 15 minutes.

I copied the below from the Campbells Kitchen Recipe Log - I could not get the link to copy for me - I hope this helps - this is what I use to make a casserole for my daughter....

Campbell's® Cheesy Chicken & Rice Casserole
From: Campbell's Kitchen
Prep: 5 minutes
Bake: 50 minutes
Stand: 10 minutes

Serves: 6

Ingredients:

1 can (10 3/4 ounces) Campbell's® Condensed Cream of Chicken Soup (Regular or 98% Fat Free)
1 1/3 cups water
3/4 cup uncooked regular long-grain white rice
1/2 tsp. onion powder
1/4 tsp. ground black pepper
2 cups frozen mixed vegetables
4 skinless, boneless chicken breasts halves
1/2 cup shredded Cheddar cheese

Directions:

Stir the soup, water, rice, onion powder, black pepper and vegetables in an 11 x 8-inch (2-quart) shallow baking dish.

Top with the chicken. Season the chicken as desired. Cover.

Bake at 375°F. for 50 minutes or until the chicken is cooked through and the rice is tender. Top with cheese. Let casserole stand for 10 minutes. Stir rice before serving.

Try It Alfredo: Use 1/4 cup grated Parmesan for Cheddar cheese. Add 2 tablespoons Parmesan cheese with soup. Use broccoli flowerets for vegetables. Top chicken with remaining Parmesan cheese.

Trim It Down: Use Campbell's® 98% Fat Free Cream of Chicken Soup instead of regular soup and use low fat cheese instead of regular cheese.

Mexican: In place of onion powder and pepper use 1 teaspoon chili powder. Substitute Mexican cheese blend for Cheddar.

Italian: In place of onion powder and pepper use 1 teaspoon Italian seasoning, crushed. Substitute 1/3 cup shredded Parmesan for Cheddar.

This is one my mother-in-law always makes that is great. I am going to make it for Thanksgiving this year. I was a little surprised it has cheez wiz in it (yuck), but I know it always tastes great when she makes it, so I'm going to try it.

2 pkgs. frozen chopped broccoli
1/2 stick butter
1 small onion, chopped
2 stalks celery, chopped
2 cups cooked rice
1 can cream of mushroom soup
1 can cream of chicken soup
1 large jar cheez whiz
salt and pepper to taste

Cook broccoli according to directions on package (about 6 minutes). Melt butter and saute onion and celery until clear. Add rice, soups, Cheez Whiz, salt and pepper to taste. Mix together and put in a well greased casserole dish. Bake at 350 for 20 minutes. You can also use shredded cheddar cheese on top if desired--she usually does.

My great-grandma's recipe- everybody always loves it!
1 stick of butter
1 medium onion, chopped
1 can cream of mushroom soup
1 can of Cheez Whiz
1 cup of Minute Rice, cooked
1 bag of frozen chopped broccoli, cooked
sliced or shredded cheese for top
Preheat oven to 350 degrees. Sautee onion in butter. Add broccoli to onion and butter. Add soup, Cheez Whiz, and rice to the mixture and stir until well-mixed. Pour into a cassereole dish, place sliced or shredded cheese on top, and bake at 350 for 30 minutes.
I usually microwave the broccoli while sauteeing the onion and microwave the rice while adding everything else. Then, I just dump the rice in and stir. It's really quick to prepare!

1/2 cup margarine

melt margarine. add broccoli and onion. saute on medium heat covered. stirring occasionally until thawed. add soup, cheeze whiz and milk. blend well and remove from heat. cook rice and drain. add to broccoli mix. cook 30 min. in a covered 2.5 quart casserole dish at 350.

**depending on how many people you have you may want to double your ingredients. i usually do for holidays when there will be a lot of people.**
