Need a Good Birthday Cake Recipe!

Hi!! I'm starting to plan my daughters 2nd b-day party and I like to make her a cake myself! I think it's much more special than buying one at the store. So I'm just wondering if anyone has any really good recipes that they could share. We are a very CHOCOLATE oriented family :) So something w/ chocolate would be best. I just want to do something different than just plain old chocolate or vanilla or marble. So if you have anything to recommend I would LOVE to hear it! Thanks sooooo much! :)

here is a great cake (white cake) and really good frosting. pretty easy to do but really, really good. I've gotten really good compliments from this

Best Two-egg Cake

1/2c. shortening
1 1/2c sugar
1tsp vanilla
2 eggs
2 1/4c sifted flour
2 1/2tsp baking powder
1 tsp salt
1c + 2Tbs milk

Stir shortening to soften. Gradually add sugar and cream thoroughly (12-15 min at medium-high speed on mixer). Add vanilla. Add eggs, 1 at a time, beating well after each. Sift flour with baking powder and salt; add to creamed mixture alternately with mild, beating after each addition. Bake in 2 paper-lined 9x1½-inch round pans in moderate oven (375) about 23 minutes.

Bakery Frosting

2 heaping Tbs flour
½c milk

Cook till thick (goes really fast), then chill.

1 stick margarine (½c)
½c sugar
1tsp vanilla

Beat at high speed on mixer till white and creamy.

This is the one I just made for my son's 2nd birthday, and the one my Mom always makes. It is a good, easy, moist chocolate cake. The frosting is easy too.

One Bowl Chocolate Cake (or Cupcakes)

2 cups cake flour (1 3/4 cups regular flour)
1 3/4 cups sugar
3/4 cup cocoa
1 1/4 cups milk
3/4 cup shortening (I use butter)
3 eggs
1 1/4 teaspoons baking soda
1 teaspoon salt
1 teaspoon vanilla extract
1/2 teaspoon double acting baking powder

Preheat oven to 350 degrees
Grease and flour cake pans (if using layer cake pans, makes 3 8" layers)

Measure all ingredients into large bowl. With mixer on low speed beat until well mixed constantly scraping the sides of the bowl. At high speed, bean 5 minutes, scraping the bowl occasionaly.

Pour into prepared cake pan(s). Or, spoon into muffin cups for cupcakes.
Layer cakes take 20-25 minutes, cupcakes 20.
Two nine inch layers will take 30-35 minutes (almost too much batter for two 9 inch layers).
Sheet cake: not sure how long to bake, but after 20-25 minutes, watch it closely.

Chocolate Butter-cream Frosting:

1 16 ounce package powdered sugar
1/2 cup softened butter
1/2 cup cocoa
1 1/2 teaspoons vanilla extract
3-4 tablespoons of milk or half and half (more if needed to make the icing of good spreading consistancy)
(I think I use more than the 4 tablespoons, but not a lot more, add it carefully)

Try a checkerboard cake. I'm making it for my son's 3rd b-day in may. You can get a checkerboard cake pan at Walmart for $8.88. As a test run, I made a chocolate and butter cream cake with chocolate frosting. DE-LISH-US!!!!!
