Ground Beef Casserole Ideas

I have a bunch of ground beef, I got on a great sale. After I use some for dinner tonight, I'd like to pop a casserole in the oven, for tomorrow. I am having a really hard time finding any casseroles without "cream of" soups. We don't like to use them at all.
Does any one have a cream of-free casserole recipe? Thanks!!

I was going to suggest lasagna (mix meat with spaghetti/marinara sauce and layer with cooked noodles, cottage cheese or ricotta cheese, and mozarella cheese), or a meatloaf if the beef is not cooked yet. There's a great crockpot meatloaf recipe that I've used that I got off of kraftfoods.com. I believe it's called italian meatloaf- it uses breadcrumbs and marinara sauce in with the meat.

Shepherd's pie: mix ground beef and mixed veggies. Put in a pie dish and top with mashed potatoes. Add cheese on top.

Baked Rotini

1 pound gr. beef
1 medium onion, chopped
1 green pepper, chopped
1 28 oz can diced tomatoes
1 can tomato paste
1 4 oz can sliced mushrooms
1t salt (optional)
1/2 t basil
1/2 t oregano
1/4 t garlic powder
1/4 t crushed red pepper
1/2 lb. - 1 lb. rotini, uncooked
2 cups shredded mozzarella cheese

In large skillet, combine ground beef, onion and green pepper. Cook until beef is browned and pepper is tender; drain. Stir in next 8 ingredients. Bring to boil. Reduce heat; simmer 20 minutes. Prepare rotini according to package directions, drain. Combine rotini and meat sauce, mix well. Layer 1/2 mixture into 3-quart baking dish; top with 1 cup mozzarella. Repeat layers with remaining mixture and cheese. Bake in 350 degree oven until hot, 20-30 minutes. (Can make day ahead, refigerate, then bake next day.)

Mix ground beef with a can of stewed tomatoes ( taco seasoning if ur fam likes it. I will mix half of the g. b. withseasoning and serve the part without to my son). While beef is browning mix a box of corn bread mix Pour beef mixture in a deep casserole dish. Pour over a can of corn (I will use frozen). Pour corn bread over corn and beef. Cook in preheated oven at 350 degrees for 30-45 min until corn bread is cooked through. You can sprinkle cheese on top. Browned onion chips/ rings are also yummy.

How do you feel about gravy? LOL
This recipe does call for a "cream of" soup, but I have made it with gravy instead.

Tater Tot Casserole
Press 1.5 lbs of beef into the bottom of a 9x13 pan.
Spread beef gravy over the beef. Sprinkle with 1-2 T of dry onion soup mix.
Layer (in rows) the top with frozen Tater Tots.
Bake at 350 for about an hour or until beef is cooked well.

I got this out of a Kraft recipe magazine. We call them "meat muffins"
1 box stove top (low sodium)
1 lb ground beef
1 mix in to taste (either garlic or taco seasoning)
barbque sauce or salsa
shredded cheese
wet the stove top and then add ground beef and your mix in (about 1 tbs) and mix like meatloaf.
Put into muffin tins with a divit in each meat muffin and if you used garlic, add a spoon of BBQ if you used taco seasoning add Salsa.
Put in oven bake 25 - 35 min on 350.
add shredded cheese on top and bake an additional 5 min.
Poof, meat muffins. My kids love em and use pam on the muffin pan for easy release.

Navajo Tacos
1 lb gr beef
3/4 c. chopped bell pepper
1/2 c. chopped onion
1 15 oz. can tomato sauce
1 can pinto beans, rinsed and drained
1 package of crescent rolls
1 cup shredded cheese
1 tbsp. taco seasoning

In skillet brown meat and saute onion and peppers. Add tomato sauce, pinto beans, and taco seasoning, lower heat and simmer 5 minutes

Spray a 9x13 pan with baking spray and roll out crescent rolls. Pat down for crust. Bake for 6 min. at 350 degrees

Spread cooked ingredients over crust, bake 10 min at 350

Add cheese, bake 5 min

Top w/ lettuce, tomato, salsa, and sour cream

Taco Bake

1# ground meat
taco seasoning
tomato sauce
Ranch Style Beans
Shredded cheese
Nacho Flavored Doritos (regular or baked)

Brown the ground meat, mix in the taco seasoning, tomato sauce and Ranch Style beans. Cover with cheese, and crushed Doritos. Bake 25 minutes at 350.

I usually puree the beans since my daughter doesn't like beans. I use a iron skillet to brown the meat. It is large enough to hold the entire casserole and will go in the oven - less to clean.

1# ground meat
BBQ Sauce
1 tbls brown sugar
1 can of biscuits
cheese

Brown ground meat, add BBQ sauce and brown sugar. Flatten biscuits and place in muffin tin. Spoon meat mixture in biscuits, top with cheese. Bake according to biscuit directions.

Mexican Rice Casserole - super yummy!

1 lb. ground beef
1 C uncooked rice
2 beef bouillon cubes
1 can tomato sauce
1 can kidney beans (drain about half of the juice)
1 T chili powder
2 tsp. dry mustard
1 tsp. paprika
parm. cheese
velveeta cheese
cheddar cheese (or mexican blend)

Cook rice according to regular directions, using 2 bouillon cubes in water. Brown hamburger; drain. To hamburger, add chili powder and dry mustard; mix together well.
Layer the ingredients in a casserole dish (preferably a round one that's deeper, it makes the layers more "pronounced"):
hamburger
velveeta cheese slices
rice
velveeta cheese slices
tomato sauce
kidney beans
cheddar cheese
parm. cheese
paprika

Bake covered (to make it more moist, or uncovered if you prefer dry) at 350 for about 25 minutes.

This recipe makes a lot, but the leftovers are very tasty, too! Hope you like it!

I don't have a casserole recipe, but you could make a lasagna. When I make it I do two at a time each in a small casserole dish. We eat one and freeze the other.

This is not a casserole recipe either, but it is one of my favorite dishes using ground beef.

Lumpia Innards (we call it that because it is just the insides of lumpia which is similar to an egg roll

Cook your ground beef. While it is cooking add chopped onion and bell pepper. After the meat is cooked you can add minced garlic, sliced carrots, cut fresh green beans. Add a little soy sauce and water and put the lid on to cook for a little while.

When the veggies have started to soften, then add chopped cabbage. Put the lid on and continue to cook.

Sorry I can't give exact measurements. I usually do around a pound of beef and just chop up a bunch of veggies. Don't put too much soy sauce and make sure to taste as you go. If you like "juice" then you can add more water.

When all your veggies are cooked to your liking (green beans take a while) then scoop it on top of some fresh cooked rice. And for an extrra special treat, add bean sprouts. So delicious!!!!! Then you don't have to worry about your veggie side for the night :-)

I made it yesterday, but didn't have a lot of veggies so it was just carrots and green beans...not as delicious but not have bad.

This is not so much a casserole, it is a top of stove meal, we call it Goulash, we use elbow macaroni, browned ground beef and a jar of spaghetti sauce...you can add chopped onion or green pepper if you like. We serve it with garlic bread and a salad...its kind of a nice change from spaghetti, it saves well, its actually better the next day reheated = )

My version of my mom's "Kids' Delight" recipe:

A large amount of ground meat, browned (add some onion and garlic while browning, a little Worcestershire sauce, too).

Cook about 1 lb of pasta (elbows or small shells are nice, but you could use ziti or corkscrew or anything fun), drain well.

In large bowl, mix 1 can diced tomatoes, 1-2 cups shredded cheddar, 1 cup sour cream (I use fat free and it tastes fine), and whatever spices or seasonings sound good. Add pasta and ground beef.

Pour into a casserole dish and top with a layer of shredded cheese. Bake until cheese is melted and dish is hot.

I don't measure anything for this recipe really, just keep mixing. My mom's version included a can of tomato soup instead of the diced tomatoes, and leftover veggies, like cooked green beans. I like the chunks of tomatoes, myself. :) I also sometimes add diced black olives.

This isn't a casserole, but I just made it last night. They are mini-mexican meatloaves, you cook them in a 12-count muffin pan.
1lb of meat
salsa, I used more than the 1/2 cup it calls for
12 saltine crackers
onion-finely chopped
1 cup of mexican blend/cheddar
1egg
Mix and place in the muffin pan for about 25 min at 400. Top with salsa, sour cream, anything really. I served with mashed potatos that I added green chilis, paprika, chili powder, sour cream, and cheese to. The husband and little man gobbled it up!

Tex-Mex- a family favorite!
1/2 lb ground beef
1/2 c chopped onion
1 (14 1/2) can stewed tomatoes
1/2 c enchilada sauce
1 tsp ground cumin
1/4 tsp pepper
6 (6 inch) tortillas
1 (3oz) package cream cheese, softened
1 (4oz) can diced green chili peppers, drained
1/2 c shredded Mont Jack chees

Brown onion and ground beef. Stir in tomatoes, enchilada sauce, cumin, pepper. Bring to boil; reduce heat. Cover and simmer 5 minutes. Pour 1/2 meat sauce into 13 x9 baking dish. Warm tortillas (if desired). Spread tortillas with cream cheese, top with chiles. Fold tortillas in half. Arrange folded tortillas over meat sauce in dish; pour remaining meat sauce down the center. Cover and bake at 350 for 15 minutes. Uncover and sprinkle with cheese. Return to oven and bake 5 minutes more or until cheese melts.

One of my favorites is a variation of sheppards pie. You mix your (browned) ground beef with either beef or mushroom gravy, then layer whatever your favorite veggie is (we always use peas, they're not our favorite, but they taste the best with this casserole), then top with mashed potatoes and sprinkle some shredded cheese on top. Bake at 350 long enough to melt/crust the cheese.

My 5 year old's favorite is Bean, Cheese, Noodle Casserole. You just cook your hamburger meat. Mix in a can of Ranch Style Beans, Add a can of Spaghetti Noodles to the top (Yes, I said Can of Spaghetti), then put sliced cheese on top. Put it in the oven until the cheese is melted. Super fast and easy. Enjoy!

I grew up on a casserole we called "Western Casserole". I brown the ground beef and steam rice then combine in a casserole dish with a can of corn, a can of green beans, a small can of tomato sauce and top with cheese. I bake for about 30 minutes. Super easy and yummy! Also great to take to a friend when they have a baby or otherwise need a dinner.

here are a couple of casseroles my family likes

Baked mosticcoli
1 box of mosticcoli cooked according to directions
1lb (or as much as you like ) ground beef browned and drained
1 onion diced small (optional)
1 green pepper diced small (optional)
1 large jar of spaghetti sauce (I use prego traditional)

In large baking dish spray a layer of pam cooking spray. pour a little bit of the spag sauce in bottom of dish. put cooked mosticcoli in dish, layer in ground beef. spread rest of sauce evenly over the noodles. Bake till warmed thru. pull out and layer about 2 cups of shredded mozzarella cheese if desired. bake till cheese is browned. my kids love this.

chili casserole
ground beef browned and drained
box of mosticcoli
large can of diced tomatoes
cheddar cheese
brown ground beef and drain, add powdered chili mix (I use frenches) add 1 large can of diced tomatoes. cook till heated through.
spray pam or cooking spray into bottom and sides of a large baking dish
layer noodles and chili mix into dish mix in about a cup of cheddar cheese. bake till heated through. layer rest of cheese on top and bake till cheese is bubbly. we serve this with cornbread and salad.

you can do same as above with taco mix but crunch up some tortilla chips or fritos and layer on top and bake for a few minutes. really yummy

One thing I do is brown my ground beef with whatever spices you always start with (ours is Extra Spicy Mrs. Dash), then spread it on a paper towel on my broiler pan (to let it drain the extra fat) and let cool. I'll cook the whole big package (5 or 6 lbs) then use my scale to put it in 1lb freezer bags and freeze it. When I need meat for spaghetti sauce, taco meat or anything like that, I just take it out and pop it in the microwave for 2 minutes to break it up and add the sauce or spices in a pan on the stove. Cuts down on prep time!
Another recipe I use is Mexican Dumplings
1 lb ground beef, 1 pkg taco seasoning, 1 can Ranch style beans, 5 or 6 flour tortillas and shredded cheese.
Brown beef (or use your frozen cooked beef), add taco seasoning according to directions, add ranch style beans and 1 can of water, rip tortillas into bite size pieces and fold into mixture. Let simmer on med-low for 10 minutes or until soft. Top with shredded cheese and serve.

Hamburger casserole
ground beef
1 can whole kernel corn , drained
1 can tomato soup ( do not add water or milk )
1 cup cheese (cut into cubes)
onion , salt, pepper to taste
2 cups peeled and thinly sliced potatos

Brown ground beef, drain grease, mix all ingredients together
cook at 350 degrees for 1 to 1 1/2 hours
