Hi everyone,

I'm having my baby's first birthday this weekend and I'm still not set on food ideas. Does anyone have any easy, yummy brunch ideas. I will be for a big crowd. Thanks

I like to go to SAMS club and get their Croissants, and meat and cheeses and veggie trays and their spiral rollups slices and mini quiche...

Best Banana nut bread Recipe ever!!! I made it for my son's 2nd birthday party. Everyone asked me for the recipe. It is so moist and yummy!


Banana Nut Bread

3/4 cup butter
1 1/2 cups sugar
1 1/2 cups mashed bananas
2 eggs
1 teaspoon vanilla extract
2 cups all-purpose flour
1 teaspoon baking soda
3/4 teaspoon salt
1/2 cup buttermilk
3/4 cup nuts -- chopped

Cream together butter and sugar. Add banana, eggs, and vanilla. Sift together dry ingredients. Add alternately with buttermilk. Blend well. Stir in nuts, and pour into a greased loaf pan. Bake at 325 degrees for 1-1/4 hour.

I have helped host several brunch baby showers...we always do a breakfast casserole, monkey bread, fruit, pigs in a blanket (crescent rolls, little smokies & cheese), and pink punch. You could do muffins instead of cupcakes if you wanted to...
Here are the recipes, they are all really easy and you can do a lot of the prep the night before:

Breakfast Casserole:
1 lb breakfast sausage
10 eggs
8 slices of bread
1c sharp cheddar
2c milk
salt & pepper to taste

Cut the bread into cubes, including the crust.
Cook sausage (crumble as you cook it).
Slightly beat eggs.
Mix all the ingredients together.
Spray a 9x13 casserole dish with Pam and pour in all ingredients.
Refrigerate over night.
REmove from refrigerator, while preheating oven to 350.
Bake for 35 minutes, or until the center is firm and cooked through.

Monkey Bread:
1 stick butter
1c sugar, divided in half
2 tsp vanilla
2 tsp cinnamon
3 cans of biscuits (regular, not flaky)

Melt butter, vanilla & 1/2c sugar on low, try to get sugar to dissolve as much as possible. Allow to cool slightly.
Mix 1/2c sugar & cinnamon in a bowl.
Grease bunt pan generously.
Take 1 can of biscuits out of refrigerator at a time. Open the can & cut each biscuit into quarters. Roll around in the sugar-cinnamon mix and place into the bunt pan.
Pour slightly cooled liquid over the biscuits.
Bake at 350 for 20-25 minutes.
Loosen from edges and turn out onto a platter.

Pink Punch:
18oz frozen lemonade
5c water
1pt strawberries (fresh or frozen work)
1 liter ginger ale
6c sprite

Combine 1st three ingredients, cover & chill (this can be done the night before).
Gently stir in ginger ale & sprite just before serving.

Yum, now I'm hungry!
Enjoy!

I host brunches quite often and two dishes I always serve are a sausage and egg casserole and a hashbrown casserole. Both are super simple. I actually did a breakfast birthday party for my daughter's 3rd bday last month. I served the two casseroles, pancakes, sausage, ham and cheese crescent rolls, doughnuts with other danishes, apple & orange juice and coffee with different flavored creamers. Then we had cupcakes after playtime.

Breakfast Casserole:
5 slices sandwich bread (cubed)
4 eggs
2 cups milk
one chopped onion
one packaged smoked sausage(cubed)
1 tsp dry mustard
a couple dashes hot sauce
salt pepper
3 cups sharp cheddar cheese
Spray casserole dish with nonstick cooking spray then line the bottom with bread. Mix everything, but cheese and pour over the bread. Place in the refridgerator overnight. The next morning remove from the fridge, let sit for 15 minutes then top with the cheddar cheese and place in the over for one hour at 350 degrees.

Hashbrown casserole:
one package frozen hashbrowns or tator tots
one can cream of chicken soup
one pint sour cream
one chopped onion
two cups cheese
Mix everything together, pour into sprayed casserole dish and bake for 45 minutes at 350 degrees

S.: You have gotten a lot of good ideas already but here is what I typically do for brunches:

Cinnamon rolls (the kind you buy in the can w/icing) Serve hot. and have more in the oven.

Yogurt with sliced almonds on top

Fruit salad - blueberries, melon, strawberries, pineapple

Bacon or Sausage on a platter

Egg Casserole (similar to recipe already given but slightly different). I love it because it is easy.

Grease a 9x13 pan
Use crescent rolls from a can to line bottom
Add about 12-16 eggs that are beaten
Sprinkle in lots of Cheddar or Swiss Cheese
You can add drained tomatoes or sauteed mushrooms
Cook at 350 for an hour - in the last ten minutes I add more cheese on top.

Also, you could add browned sausage but I normally serve it on the side.

I like the mamas idea of mimosas!

Hi S.,

When serving brunch to a crowd, I try to serve food that will taste good at room temperature, because not everyone will sit down at the same time. With little ones around, you may not want to deal with chafing dishes or hot plates.

A favorite: French Toast Casserole. Here is one:

I also serve banana bread a lot. I can freeze a loaf and take it out that morning to put in the oven. I serve it next to jelly, peanut butter, and cream cheese, which are all delicious on top!

And don't forget the mimosas - congratulations to you, Mom, for surviving the 1st year!

Brunch is my favorite type of party! You can have a basic egg and sausage casserole (prepared the night before - then put in the oven day of party).
Fruit tray; garlic cheese grits; bite sized danish; asparagus rolls or even cucumber sandwiches...
Orange juice; coffee; water with lemon slices.

You have the option to have mild, sweet and savory items. You also could have a baked ham with rolls...

My mother and I use to throw Brunch showers for brides and babies all the time. Our staples were Fresh Fruit, Banana Bread (or other pastry) and Egg Casserole. All of which can be made the night before. In fact the casserole is better if it sits in the refrigerator over night and thrown into the oven the next morning. You can add from there with, different fruit juices, coffee, hot tea, veggie tray, peanuts, mints, pigs in a blanket and more. I have a really easy Egg Casserole reciepe that everyone loves. You can do a bowl of yogurt with teddy grahms. Peanut butter & banana roll ups, bowl fruit, a breakfast casserole, take pretzels and stick a herseys kiss on it put in oven and get soft then put an M&M on it to flatten. I hope this helps. Go to www.foodnetwork.com They have so many wonderful, easy brunch ideas. The egg casserole is a great idea because you can make it the day before. It is also inexpensive to make. Do pigs in a blanket. Get biscuits, cut them in half, roll one-half of the biscuit around a small sausage (the ones that are about 2 inches long can't remember the brand) and bake according to the directions of the biscuits. The biscuits with butter added are great. They add so much flavor. They are easy and you can make so many ahead of time and just pop them in the oven when you need more. Have a fruit bowl with selected fruits, sliced tomatoes, and for the adults how about mimosa's and/or Bloody Mary's if your group drinks alcohol. You can also make virgin drinks. You can also buy the frozen mini quiche at COSTCO or SAMS. They are great and easy to prepare for a large group.
The cheese grits are also a great idea and are so easy to make. Look on the Food Network website for an easy recipe. You have been given some great ideas, but the ideas from COSTCO and SAM'S are great.

No matter what my theme is, I always have a veggie tray, a fruit tray, chips and queso or hot sauce or both. For a brunch, maybe some donut holes, pigs in a blanket (smokies rolled in crescent rolls - super easy and yummy), a breakfast casserole, maybe some finger sandwiches. I have a cheesy sausage roll recipe that my mother-in-law makes that my husband loves - 1 package of sausage, one bag of grated cheddar, and 1 cup of bisquick. Mush together and roll into balls. Bake at 350 for about 20 min. I don't like them, but everyone I've made them for does. It is nice in that they can be made the night before. I've also made a pull apart loaf with the pillsbury cinnamon rolls - cut each circle into 4ths and put randomly in a greased loaf pan. Bake like the directions say. Remove from the loaf pan and drizzle with the icing (you have to micrwave it about 5 seconds to make it pourable).

Sausage Balls - you can find the recipe on the Betty Crocker webiste
Pancake Puffs - they sell the pans at Target and you can fill them with anything (bacon, chocolate, sausage, etc.)
Bacon & Tomato Tarts - there are several variations out there

Hi S. - Depending on your budget, Incredible Edibles has fruit bouquets and they deliver (to most areas!) Some of their bouquest have chocolate dipped fruit - yummy! Or you can always make your own fruit bouquet!
