HI Moms,
I do not like much meat and prefer beans instead. Could you please share your favorite vegetarian main dish recipes with me, especially any that use beans? Thank you so much!

This is kind of a Thai peanut dish using tofu. Its my go to weeknight dish and after you make a it a few times you won't need to look at the recipe.

Drain tofu and press it (ie wrap it in some paper towels and put a heavy pot on it for an hour or two to get the water out of the tofu). Fry the tofu on high heat in sesame oil on at least two sides.

In a small bowl mix together 1/2 c peanut butter, 1/4 c soy sauce, a spalsh of vinegar, some sesame oil, minced garlic and grated ginger (optional).

Cook some long pasta like spaghetti or fettucini and throw in a bag of frozen broccoli during the last 30 seconds of cooking time.

Drain and mix with peanut sauce and tofu. Top with sliced green onions and peanuts.

this doesnt have beans but it is so good! in fact I am making it now....i am assuming from your post that you are ouvo lacto vegetarian and not vegan

cheesey fall soup

2 sweet potatoes
4 white potatoes
1 lg apple
1 can carrots

dice veggeis and apple and cover with water add:
3 cans veggies broth (or vegetarian beef bullion works better 5 cubes)
1 tb cumin
2tsp cinnomon
1tsp oreintal spice (optional)
1 pinch crushed red pepper
2tsp garlic pwdr
2tsp onion pwdr
2tsp salt

boil till tender. place have of misture in food processor or blender and puree. add back to pot. add 1 cup milk and 1 tb light butter. let butter melt. add 1/4 cup fetta cheese and 1 tb fat free cream cheese. let simmer for about an hr. stir regular so cheese doesnt burn. I like to thicken mine with a little corn starch but that is optional. I also like to make some borwn rice (not instant...yuck!) and serve it in the center of the bowl of soup. its like a hug on the inside!

I found this recipe and love it (it's a crockpot recipe)

Mediterranean Vegetable Stew
2 T olive oil
1 chopped red or yellow onion
1 to 2 coarsely chopped yellow, orange or red sweet peppers
2 large garlic cloves, crushed
1 or 2 yellow summer squash or zucchini
1 small eggplant, unpeeled, cut in 1- to 2-inch chunks
1 can Italian diced tomatoes
1 can of quartered artichoke hearts
1 can chickpeas, drained and rinsed
1 tsp dried rosemary
1 T dried parsley

Place all ingredients except olive oil in the crockpot. Drizzle oil over all and mix well (use clean hands or a wooden spoon).
Cook on low for 6 to 8 hours or on high for about 4.
Serve over couscous.

We tested it out on family several months ago and also on some vegan friends who came to dinner, and it was ooh'ed and aah'ed over.

Anything Mexican that involves rice and beans, but's probably obvious. Wal-Mart carries a Soyrizo - veggie chorizo - that I recently made for for dinner with corn and black beans.
Veggie Chili is great - Kidney beans, soy meat, chili powder/cumin, onions, peppers, simmered with or without rice and cheese.sour cream. Either way - yum.
My new favorite veggie meal is made with Spaghetti Squash. use it instead of noodles with your favorite sauce. I'm not sure if if can be incorporated with beans, but it is a very good alternative with lots of benefits.
