Cookies Recipes for Cookie Exchange Party

i haven't made these yet, but I am going to for tomorrow.
S'mookies:
Make peanut butter cookies (any recipe) and refrigerate.

Melt 1/2 c chocolate chips with 2 Tbs unsalted butter; let stand for 30 minutes until slightly stiff

Heat 1/2 c marshmallow creme for 10 seconds.

Spread creme on one cookie and chocolate on another and sandwich them together.

Store cookies in fridge.

This is the cookies people beg me to make! And YES this is really the only ingredients....
1 cup plain sugar
1 cup SMOOTH peanut butter (skipy or jif are what I use)
1 egg

Mix egg and sugar together, then add PB, mix well. Then roll into 12 balls (it will make 12 perfect!) place on cookie tray and push down to flatten them a little. you can use a fork to make cross marks on them or I use a old fashion potato masher (the flat ones with squares) to make a cool print on top. (do one ore the other-it helps them cook).
Then bake for 8-11 min on 350 degrees...thats it! It a GREAT just hurry up and make cookie for people coming over/kids "oh didn't I tell you I needed these by tomorrow" cookies!!!! There AMAZING--so be prepared to make more ( I will easily eat a whole batch in one day)

These are my husband's favorite and are easy to make:

Butterscotch Gingerbread Cookies

3 cups flour
2 tsp. baking soda
1 1/2 tsp. ground cinnamon
1 1/2 tsp. ground ginger
3/4 tsp. ground cloves
1/2 tsp. salt
1 cup butter or margarine
1 1/2 cups packed brown sugar
1 egg
1/3 cup mild molasses
11 oz. pkg. butterscotch chips

Preheat oven to 350°.

Combine flour, baking soda, cinnamon, ginger, cloves and salt in small bowl.

Beat butter, sugar, egg and molasses in large mixer bowl until creamy. Gradually beat in flour mixture until well blended. Stir in morsels. Drop by rounded tablespoon onto ungreased baking sheets.

Bake for 9 to 11 minutes or until cookies are lightly browned. Cool on baking sheets 2 minutes; remove to wire racks to cool completely.

I made Nutterbutter Santas for a cookie exchange last year and they were a HUGE hit. They are VERY easy to make, but a bit messy. However, they are something fun that your 5 year old would probably get a kick out of helping you with. Here is a link to the recipe and pictures. Have fun!

Everytime I make these cookies for an event, I always get asked for the recipe: monster cookies! It's a Paula Deen recipe, so you can find the recipe on foodnetwork.com. I don't use raisins and I double the chocolate chips and mini M&Ms.

This is a real crowd pleaser:
Buy a package of pull apart choc chip cookie dough (makes 24 cookies) doesn't need to be toll house or pillsbury, can be generic brand. Make your own cuts and Cut cookies into 30 (not 24).

Put 1 piece of cookie dough into Wilton Mini size baking and party cups, sold at Walmart (pack of 100)or a party store (or a generic brand of mini muffin cup). Bake about 8-10 min.
Take out from oven and immediately put in an UNWRAPPED Reeses miniature peanut butter cup, right in the center, pushing cookie dough down so it forms along the sides of cup. The chocolate will start to melt so they need to be put in the refrig or freezer for a very short time.
Cups can be put on a large cookie sheet so you can probably fit all 30 cups at once, depending how large the sheet is. You do not need muffin tins. E-mail me if questions

They are so EASY!!!!!

Go online and type snowball cookies. These are easy and great for Christmas. They are a hersey kiss wrapped inside a buttery nut cookie and then rolled in powdered sugar to look like a snowball. They are easy and each batch makes several dozen.

I have 2 favorites - one is a double chocolate cup - it is baked in a mini-muffin pan and has a chocolate dough and a chocolate filling. The other is a pretzel/rolo/pecan half thing - email me and I can send you the recipes.

If you go to www.recipezaar.com you can search (free!!) for recipes by the level of 'skill' needed, by the ingredients you have on hand, by whether or not you want to 'bake' or 'chill', etc.. it is a really awesome site!

As for cookies, I love 7 layer bars and have toyed with spritz cookies this year (love 'em), chocolate covered peanut butter balls and pecan carmel surprises.

As for how to pack them, just buy the little cookie bags they sell at Target and tie them up. They'll look very cute and presentable.
