Converting Recipe from Slow Cooker to Oven

I have a recipe for crock pot stuffed peppers. My problem is that I imagine they wouldn't reheat well in he microwave, and my husband works nights. Usually, I prepare him a plate so all he has to do when he gets home is nuke it. So I was thinking that I would prepare it for the rest of the family in the crock pot as directed, but keep a couple out and put them in a baking dish so he can just toss it in the oven when he gets home. (I do this with quite a few recipes that don't reheat well in the microwave.)

BUUUT, I have no clue what the baking time/temperature would be. They are black-bean stuffed, so no worries about cooking any meats through. The recipe says to cook on low 6-8 hours, or on high for 3-4. How would that translate to an oven?

I thought about just cooking them in the crock pot after ours are done so they will be ready when he gets home, but mine is huge and I'm not sure if that would be an issue when cooking just one or two peppers. (Is it?)

I'm not sure how you would convert that but I just wanted to tell you that I think it is so sweet that you do this nightly for your husband!!!

We nuke stuffed peppers all the time. They are just fine. If you want you can also re-heat in a small pot with a bit of the released juices from the crockpot.

I make stuffed peppers in the oven all the time. They take about 45 mins. Can't you just throw his in about an hour before he gets home? I made them in the crock pot once they nuked just fine.

The problem with stuffed peppers is that they need to be tender. Often the peppers are partially boiled so that they'll become tender. They're great in the slow cooker because it's a nice moist environment. When cooked in the oven, usually they need to be set in water to avoid drying out.

And they're not very fast in the oven. Preparing them ahead and leaving them for your husband to bake might require an hour of cooking time.

Why don't you try this: find a small oven proof dish that fits inside your large slow cooker. Place water in the bottom of the slow cooker (an inch or two) and then make a ring from aluminum foil that the smaller container can rest on (so it's not directly on the slow cooker bottom). Just twist foil into a rope and make a circle of it.

Then place the peppers in the smaller dish just as you would in the slow cooker, put the whole dish into the slow cooker, cover it and by the time your husband gets home, there will be a nice stuffed pepper dish inside the slow cooker for him.
