Bringing Food to a Friend

I'm going to be bringing some food to a friend who is running herself ragged while her premature twins are in the hospital. Wanted to bring simple things she can just grab on her way out the door (like sandwich fixings, chopped veggies, etc.) and some easy dinners. Trying to stay away from heavy casseroles and she doesn't like fish. Any ideas?

How about salad to go?

You could buy some Gladware bowls, little packets of dressing, dried fruit, nuts, croutons and then package them? Then you could also make little baggies of meat (or by the chicken/ham ones). I think even if it was partially assembled (if she could grab the containter with the lettuce) and rubberband the meats/other toppings with a fork adn done...it's the assembling part that is hard, but it if was organized and stacked together...1..2..3..open fridge grab package and ...lunch!

I hope the twins come home soon!

I know it's starting to get warm, but what about making some soup and freezing it in dinner size portions?

That sounds awesome. Sandwiches are nourishing and easy to eat on the road. Maybe some other instant-type stuff that can be eaten on the go, like granola, nuts, dried fruit, cheese sticks, a 6-pack of Gatorade! I just remember being so tired and needing food to eat NOW that didn't take any effort!

For a friend of mine, I bought flatbreads, spread different items (cream cheese, sour cream, etc) then filled with different items, some with ham and cheese, some turkey, etc.) rolled, sliced in half or thirds and foodsaved. We had her toss them in her freezer and she could either take them out the night before or that morning (defrosted by lunchtime)

My friend also liked some omelettes, meatloaf and other things that you can eat warm for dinner one night and could make a day or two of sandwiches on another.

Nothing like someone else chopping a big fruit salad for you too and putting in styrofoam coffee cups with lids.

I would stop at Jewel and get her the small containers of a bunch of different salads - chicken caesar, pasta, seafood, potato. I love to grab those when I'm in a hurry.

How about a big jar of trail mix.. you can buy it or make it yourself.. with nuts, granola, dried fruit, cereal.., chocolate chips.. whatever you think she may like. That sort of food would give her a healthy boost and be something she can grab a handful of. How about a quiche of sorts or a pasta salad with tomatoes and cheese?
