Hi Mamas! No biggie here but I need ideas on what to make of ripe bananas...I buy them as a snack and they often end up too ripe to enjoy after only a day or two. If you have ideas/easy recipes on what to make of them instead of just throwing them away, I'd like to hear from you. I thought about mashing them and make ice cream but I am not sure if I should mix them with milk/cream and in what proportions, plus I don't have an ice cream maker...so I am not really progressing. Thank you in advance.

I think Banana bread requires overripe bananas, doesn't it?

You also could buy them when they are a little greener, and they will last longer on the counter. :)

You an always peel them, freeze them and use them later in yogurt smoothies.

if you dont know what to do with them right now, you can always freeze them. thats what i do. then just let them sit out on the counter when you want to cook/bake with them!
I just made some delicious banana muffins this morning...

2 cups all-purpose flour
3/4 tsp kosher salt
½ tsp baking soda
1 tsp baking powder
1 tsp. cinnamon
½ cup vegetable or canola oil
¾ cup brown sugar
¾ cup sugar
2 tsp vanilla extract
1 ½ cups over-ripe bananas, mashed (about 3 large bananas)
1 cup light sour cream, or whole milk yogurt
2 large eggs

Preheat the oven to 350 degrees. Grease and line a 9×5” metal loaf pan. (Or, if making banana muffins, line 12 muffin cups with liners.)

In a bowl, stir together the flour, salt, baking soda, baking powder, and cinnamon.

In a large mixing bowl, mix together the oil, brown sugar, and white sugar. Mix in the vanilla extract, mashed bananas, sour cream, and eggs.

Stir in the dry ingredients until combined. Pour the batter into a pan and bake for approximately 60 minutes, or until a toothpick inserted in the center comes out clean. (If baking muffins, fill each lined muffin cup 3/4 of the way, and bake for approximately 20-25 minutes.) Let the banana bread cool for 10 minutes before carefully turning it out on a wire rack.

Make banana bread. I have a awesome recipie and my coworkers bring me ripe bananas to make some. They love it.
Here is the recipie:
preheat oven to 350 while mixing ingredients
2 ripe bananas
1/2 cup of sugar
2 eggs slightly beaten on the side
1 teaspoon of baking powder
1/2 teaspoon of baking soda
1 stick of butter melted and cooled
1 teaspoon of vanilla extract-imitation is fine too
1.5 cups of flour
1 teaspoon of cinnnamon
a pinch of salt

Mix sugar and butter first,next add in eggs that were beaten. Beat on medium speed with mixer. Next,add in the bananas and the vanilla extract.
Next,add in baking soda and baking powder,salt and cinammon. When all this is mixed well about 2-3 minutes then add in the flour last.
Spray bread pan with pam cooking spray and cook for 50-60 minutes. It should be golden brown on the top and not sticky when you test it.
Have fun, this is a good receipe and not that hard to make. Enjoy

Meaghan already gave most of my suggestions :) I also like to do smoothies with them. I little known fact that might help you out is that you can freeze your ripe bananas until you need/want to use them (but NOT until you want to eat them, freezing makes them...not the same). My parents were living in Africa and didn't have regular access to bananas, which was h*** o* my mom who likes to have a strawberry banana smoothie daily, one of her coworkers suggested the freezing and it is very nice to not have to throw any bananas away anymore...sometimes only one is left to get too ripe, and that isn't enough to make much of anything, baked goods wise.

A super good kid and adult treat is a "banana pudding cake". I layer graham crackers (just tried chocolate grahams too), pudding & cool whip mix (1 big box made with a little extra milk, folded into cool whip) and sliced bananas on top. You can mash them and mix with the pudding instead. 3 layers is perfect. Refrigerate for a few hours to let the pudding soak into the grahams. Healthy and yummy!

I just found a super easy recipe for banana bread/muffins.

Banana Nut Bread
INGREDIENTS:
1 (18.25 ounce) package yellow cake mix
1 egg
1/2 cup milk
1 cup mashed ripe bananas
1/2 cup chopped pecans
DIRECTIONS:
1. In a mixing bowl, combine cake mix, egg and milk. Add bananas; beat on medium speed for 2 minutes. Stir in pecans. Pour into two greased 8-in. x 4-in. x 2-in. loaf pans. Bake at 350 degrees F for 40-45 minutes or until a toothpick inserted near the center comes out clean. Cool for 10 minutes before removing from pans to wire racks to cool completely.

I usually make banana bread for the kids, only I replace most of the sugar with applesauce. It tastes great and is really moist and better for you. Just be sure to store it in the fridge, the applesauce makes it spoil faster if left at room temp.

Smoothies have always gone over really well with my son. If you have a blender or Ninja it's really quick and easy too. Just throw in the banana with some ice then you can get creative. You can use milk or switch it up with some orange juice. Add some ice cream to make it sweet or if you want less sugar yogurt works really well too. It's fun to play with the flavor by adding different berries too.

Wrap up ripe bananas in batches of 2 big or 3 small and stick in freezer until ready to use. Some great ideas for ripe bananas:
-Banana/Strawberry smoothies are awesome
-Slicing the bananas after they thaw and mix into pancake batter
-Rachel Ray has a recipe for banana donuts that were really yummy...you don't have to have a donut pan, we used muffin pans and they turned out great.
-banana bread
-or my favorite....vanilla pudding with banana slices mixed in and then layered into a pan with Nilla Wafers on the bottom, pudding/banana mixture next, then another layer of wafers, then the mixture and then topped with wafers again. YUMMY!
Have fun with all the ideas you got....

EDIT: Thought of one more that i LOVE!
Banana Oatmeal Cookies
3/4 C Crisco Shortening
1 egg
1 1/2 C flour
1/2 t cinnamon
2 C Quick Oats
1 C sugar
1 C mashed bananas (2 bananas)
1 t salt
1 C choc chips
1/4 t nutmeg
1 t baking soda

Heat oven to 375
Mix shortening, sugar, egg, and bananas well.
Add flour, baking soda, salt, nutmeg and cinnamon.
Stir in oats and choc chips.
Bake 8-10 minutes.

banana oat muffins on allrecipes.com. my kids love them and I can freeze and defrost 1 or 2 at a time. I have been told (but have not tried) to keep bananas in the fridge. the outside will be brown and look bad but the inside stays ripe.

I peel then freeze them in a freezer bag until I'm ready to use them in smoothies, banana bread and my favorite:
Banana Oatmeal Muffins
1/4 C butter/margarine softened
3/4 C brown sugar
1 egg, beaten
1C buttermilk
1 C rolled oats
1C flour
1 TBSP baking powder
1/2 tsp salt
1/2 tsp allspice
2 medium bananas chopped or mashed

Cream together butter and brown sugar. Mix in egg and buttermilk. Mix together oats, flour, baking powder, salt and allspice. Add to creamed mixture. Stir in bananas. Spoon into greased muffin pan. Bake 400 for 20-25 min.

There's always banana bread!!! I have a cream-cheese banana nut bread recipe that is sooooo good. I am at work so I don't have it on me but if you are interested pm me and I can get it to you. Then you can switch it up a bit too and make muffins instead of a loaf.

the ice cream is just frozen bananas in the food processor. Cut them up into pieces and whizz until they are smooth and creamy. You cam add peanut butter, chocolate or a spoon of yoghurt. You don't need to add milk but you can if you want. The proportions don't really matter. You do not need an ice cream maker. You can do it if you have any type of blender.

Banana bread! You can freeze the bananas and keep them until you need them too. They are still soft after a minute or two of being out of the freezer. You could also do smoothies in your blender.

I smash mine and fold them into pancake batter! Yummy. You can also make banana bread with them. The bananas need to be very ripe for bread, so that seems like a good fit.

You can always cut back on the amount of bananas you buy at a time. I do a banana run once a week because the bananas I buy on Saturday are usually gone by wednesday. If I buy a week supply, those bananas at the end of the week are in good shape.

Hello~ First of all, peel the banana and freeze them. Then, you could use them in pancakes, muffins, bread or smoothies. You can make banana (nut) bread, banana chocolate chip bread, muffins, pancakes or waffles and smoothies. The great thing about muffins, bread or pancakes you can freeze those as well. For a smoothie add a 1/2 c. vanilla yogurt, 1 c.milk, 1 or 2 bananas, strawberrries, blue berries, ice and a splash of orange juice. Just google some recipes. Hope this helps and Go Bananas! :)

This happens to me too, and it seems like my daughter will go through phases of eating tons of bananas and right when I stock up on a lot, she completely stops eating them...haha. But I like to make banana bread or banana nut mini muffins. ( I usually google, or use allrecipes.com) We also make smoothies with bananas in them. I saw someone mentioned freezing them, make sure to freeze them flat on a tray and then once they are frozen you can put them in a freezer bag.

We cut them into smaller pieces and freeze them. Then we make smoothies:

8 oz Chocolate Milk
2 Frozen (very ripe) Bananas

OR

6-8 oz Vanilla Yogurt
1/2 cup Frozen Strawberries
1/2 cup Frozen Blueberries
1 Frozen Banana
1/2 Tbls Vanilla Extract
1/2 cup Pomegranate/Blueberry Juice
